Blackened Walleye
This is a simple recipe, as the spice mix can be made in advance or you can buy it premixed. It can be cooked outside on a cast-iron skillet, so there’s no smell in the house.
Ingredients
6 tbsp. butter, melted
4-6 walleye fillets (about 6 oz. each)
7 tbsp. spice mix
3 tbsp. melted butter (optional)
Spice Mix
2 tbsp. sweet paprika
1 tbsp. sea salt
2 tbsp. onion salt
2 tbsp. garlic salt
1 tsp. celery salt
2 tsp. ground Cayenne pepper
1 tbsp. ground pepper
2 tsp. dried oregano leaves, crushed
2 tsp. dried thyme leaves, crushed
Instructions
Combine the spice mix ingredients. This will make about three-quarters of a cup. Store in an airtight container away from heat or light. Shake before use. Heat a large cast-iron skillet over high until it is very hot (about 6 minutes). Dip fish in melted butter, coating both sides. Evenly sprinkle the spice mix on both sides. Immediately place fish in hot skillet. Cook until the underside forms a nice crust (about 2 minutes). Turn fish over and cook for another 2 minutes or until done. Transfer cooked fillets to the oven to keep warm.
